How to make finger biscuits egg slices

1. Separate egg yolk and egg white.

3. Add 30g of fine sugar into the egg whites in three times and beat until dry foam. Add the first batch of sugar when it is whipping and expanding, and beat at high speed with a sharp hook. Add sugar a second time until lines appear and the meringue does not flow when tilted. Continue to add sugar a third time until it becomes dry. Let it sit for a while.

4. When beating the egg yolks, you do not need to clean the egg beater used for beating egg whites, just beat the egg yolks directly. Add 30g of fine sugar at a time, stir well and beat at high speed until the egg yolk expands and has lines but does not disappear. (It must not be too thin! Otherwise it will be difficult to decorate and will collapse.)

5. Pour the egg yolk liquid into the meringue, sift in the low-gluten flour, mix thoroughly, and use the folding technique. Mix until the flour and egg liquid are fully mixed and no small lumps appear. Don't draw circles to avoid defoaming. (I didn’t have time to take the photo)

6. Pour the mixed batter into a piping bag. I made a tool for putting on the piping bag using a large Sprite bottle. Every time I poured cream into the piping bag, it made a mess. So I came up with an idea to free my hands, and it feels much better than before.

7. Use a round hole for piping nozzle, or you can directly cut a small hole in the piping bag and pipe flowers directly. Line the baking tray with baking paper and squeeze out the cookies into long strips since they are finger biscuits. Or any shape will do, just be creative!

8. After preheating the oven to 180 degrees, put the baking tray directly into the oven and bake at 175-185 degrees for 15 minutes. Adjust the temperature according to your oven. The batter is done when it starts to brown on the surface. It will become crispy only after cooling, and it will not become soft if stored in a sealed box.

Eating out may not guarantee the hygiene of the food, so you can only feel at ease if you make it yourself. Finger biscuits and egg slices are easy to make and are guaranteed to be healthy.
