How to make sesame protein (thin) crackers

1. Take the butter out of the refrigerator and soften it at room temperature.

2. Add powdered sugar.

3. Use a manual egg beater to mix evenly, no need to whip.

4. Add egg white in three batches and mix evenly with a hand whisk. Each time egg white is added, it should be added after the previous egg white and butter are completely blended.

5. Add egg white and stir evenly.

6. Add sifted low-gluten flour.

7. Continue to stir evenly with a hand whisk, but do not over-stir.

8. Use a silicone spatula to put the mixed batter into a medium-sized piping bag. Cut a hole at the tip of the piping bag to make a slightly larger hole to squeeze out the batter (don’t cut the hole too small, otherwise it will be difficult to squeeze out the batter).

9. Squeeze out round balls of batter on a baking tray lined with tin foil, leaving a slightly larger space between each ball of batter (the batter will flatten out during baking).

10. Sprinkle appropriate amount of white sesame seeds using the technique of scattering flowers.

11. Preheat the oven to 160 degrees and bake on the upper and middle layer for about 13 to 15 minutes, until the edges of the biscuits are golden brown.

12. Out of the oven, the fragrant sesame protein (thin) crackers.

13. After cooling, store in a sealed container immediately.
