1. Separate the egg whites and yolks and put them into a water-free and oil-free container. Beat the egg whites first, then add sugar three times and beat until hard foam forms. When the egg whites are lifted, they stand upright.

2. Add sugar to egg yolks and beat with an electric whisk until light yellow and thick.

3. Add one-third of egg whites into the egg batter and stir from bottom to top without making circles. Stir evenly until it becomes thick.

4. Sift in the low-gluten flour and stir up and down until there are no particles.

5. Preheat the oven to 70 degrees and cover the baking tray with baking paper. Put the batter into the piping bag and squeeze the batter.

6. Squeeze the batter and put it into the preheated oven, 170 degrees, middle layer, upper and lower fire, about 15 minutes, until the surface is golden brown.

7. After the finger biscuits are cooled, put them into small jars and seal them to prevent moisture from returning.
