1. Wash the squid and cut it into two pieces.

2. After removing the tail, take one of the slices and place it diagonally on the cutting board with the inner cavity facing upwards.

3. Use a knife to make diagonal cuts on the fish meat at a depth of 4/5 and at intervals of about 3 mm. Then use the knife to make straight cuts at 90 degrees to the previous cuts, and make cuts at intervals of about 1.5 mm and at a depth of 4/5.

4. Cut the raw materials horizontally into pieces about 4.5 cm long and 2 cm wide.

5.Put the cut squid slices into boiling water and blanch them.

6. Roll the squid into small pieces and take them out.

7. Peel the onion, wash it and cut it into pieces.

8. Remove the stems of the green peppers, wash them, and cut them into diamond-shaped pieces.

9.Put one tablespoon of oil in the pot.

10. After heating, put all the ingredients in and stir-fry quickly.

11. Remove from the dish and drain the oil.

12. Leave a small amount of oil in the pot, add the scallion and ginger, stir-fry until yellow, then remove from the pot.

13. Add a large spoonful of sweet noodle sauce and stir-fry until the sauce flavor comes out. Then add a small spoonful of rice wine, two small spoonfuls of sugar and a small spoonful of chicken essence, then pour half a tablespoon of boiling water and stir-fry over low heat.

14. When it becomes thick, add all the ingredients, stir evenly and serve.

It is not difficult to understand how to make the fried squid rolls, but it is not very easy to make it well. This requires our own attention and diligent practice.
