1. Wash the lotus root with clean water to remove the dirt and dust from the skin, peel it, and cut it into thin slices of uniform thickness with a knife.

2. Pour appropriate amount of cold water into the pot and bring to a boil over high heat. Add the chopped lotus root slices and blanch until the water boils.

3. Drain the water from the lotus root and immediately rinse it with cold water to cool it down.

4. Wash the celery with clean water, tear off the old stems, and cut the celery into inch-long pieces at a 45-degree angle with the knife.

5. Boil the water in the pot again, add the chopped celery and blanch until the water boils.

6. Drain the water from the celery and immediately rinse it with cold water to cool it down.

7. Place the cooled lotus root and celery in a large bowl.

8. Peel the ginger, cut it into ginger powder and place it on the celery and lotus root in the bowl, add 1/4 and 1/8 teaspoon of salt.

9. Pour a small amount of cooking oil into the pot, add peppercorns and dried red peppers, turn on the heat and fry the peppercorns and dried red peppers until they turn slightly black and have a fragrant smell. This is the fried pepper and sesame oil.

10. Pour the fried pepper and sesame oil over the celery and lotus root while it’s still hot. With a sizzling sound, the aroma will come to your nose.

11. Pour 1 tablespoon of Shanxi aged vinegar along the edge of the bowl and mix well with chopsticks.
