1. Prepare all the ingredients and put 3 egg yolks, 3 egg whites and 1 egg white into bowls respectively.

3.2 Add hot water to the matcha powder and stir to make matcha liquid.

9. Add the remaining granulated sugar to the 3 egg whites in batches and beat until 70% distributed. Add the remaining meringue in step 7 and continue beating. Then add the remaining corn flour and beat until slightly dry and foamy, with a slightly curved hook.

10. Take 1/3 of the meringue and add it to the egg yolk paste and stir well.

11. Pour the egg yolk paste into 2/3 of the meringue.

12. Stir thoroughly to form a smooth batter. Lift the rubber spatula and the batter will slide down in the form of smooth and thin threads, forming lines on the surface.

13. Pour the batter onto the patterned baking pan.

14. Smooth the surface with a spatula and tap the bottom of the baking pan with your hand to release any air.

15. Put it in the preheated oven, middle layer, upper fire 180 degrees, lower fire 180 degrees, bake for about 15 minutes.

16. Cover the surface of the baked cake with baking paper, and place the baking tray upside down on the cooling net. Immediately tear off the baking paper on the surface, and then cover the cake again to wait for it to dissipate heat and cool down.

17. After the cake has cooled, replace the original baking paper with a new one, turn the cake over with the pattern facing down and tear off the baking paper on the back. Then use a knife to cut the edges of the cake at an angle at both ends. Use a knife to gently scratch the surface of the cake at intervals of about 2 cm, and then brush it with syrup. Spread whipped cream on the cake and place fruits on it.

18. Pick up the cake close to you together with the baking paper, pull the cake forward while rolling it up, and refrigerate for more than 1 hour after rolling it up.
