Step 2: Heat the oil in the pan and add garlic, ginger, peppercorns, fennel, and scallions until fragrant. Then add dried chilies and bay leaves (to prevent the dried chilies from burning), and immediately pour in the rinsed lobster.

Step 3: Stir-fry for a few times and the lobster will turn red immediately. Add cooking wine and soy sauce and continue to stir-fry.

Step 4: Pour in water and start stewing, add some salt and a little sugar to enhance the flavor. Keep simmering over medium heat until the soup is almost dried up. You can also taste the soup during the braising process. If you like strong flavors, you can add more flavors at any time.

Step 5: Okay, when the soup is almost dry, you can serve it. Sprinkle some chopped green onions on it for garnish. In this way, a delicious braised lobster is ready.

Step 6: If you like, you can sprinkle some pepper on it at the end (depending on your needs). I'm not bragging about the lobster I cooked this time, it tasted really good. Lobsters are quite satisfying to eat, but it takes some effort to prepare them yourself.
