4.1 When beating the eggs, I added some old wine, so that the fried eggs would be softer. After the eggs were fried, remove from the pan.

6. Add the soaked vermicelli and dried shrimps and continue frying. I think chopsticks are more useful for stir-frying vermicelli, especially for non-stick pans.

7. Pour some oyster sauce and light soy sauce (light soy sauce has a fresh taste and a lighter color), then stir-fry. It is best to add some broth while stir-frying. Because I didn’t have any broth at the last minute, I added some water. Otherwise, the coarse vermicelli would be too dry and have no taste.
