How to make spicy lemon chicken feet

Main ingredients: 1 pound of chicken feet and 5 red chilies.

1. When buying a pound of chicken feet, don't choose the fat ones. Generally choose the ones with blood and smell of meat.

2. Wash the chicken feet with clean water, then remove the claws of the chicken feet, and then cut them into two or three halves with a knife. Place a bowl of water in the refrigerator and freeze it (just place it in the freezing chamber for half an hour).

3. Put the chopped chicken feet, a few slices of ginger and cooking wine into the pot and cook until the chicken feet can be inserted with chopsticks (don’t cook them too soft)

4. Then take out the chicken feet, rinse the grease on them with clean water, and then dry the chicken feet and cool them down.

5. This step is extremely important, as it determines whether the chicken feet are chewy or not!!! After the chicken feet have cooled, put them in the cold water and freeze them for 10 minutes. After that, take out the chicken feet and dry them.

6. Get a larger glass jar (the kind that can be sealed). If you don’t have one, you can find one on Tmall! Then put salt, rock sugar, chili pepper (chopped), MSG, light soy sauce, and Sichuan peppercorns into the glass jar, and add pickled pepper water. You can add more!! Then taste it yourself. If there is a flavor that is not right, add that flavor. When the taste is right, add the chicken feet in one by one, and don't use ice water. After adding them, if you feel that the pickled peppers are not moist enough, add more and season until you are satisfied. Just seal it
