How to make colorful wontons

1. Add appropriate amount of soy sauce, cooking wine, oil, salt, chopped green onion, ginger, pepper powder and Sichuan pepper powder to the pork filling, stir well and set aside.

2. Wash the spinach, carrots and purple cabbage, blanch the spinach, squeeze the juice separately, add a small amount of salt to melt and set aside.

3. Put 125 grams of flour into a bowl, slowly add water, stir into snow flakes, and knead into a slightly hard dough.

4. Knead the yellow dough, purple dough and green dough in turn.

5. Flatten the white dough and press it several times using a pasta machine at level 0 (thickest), folding it each time until the dough is smooth.

6. Press other doughs one by one until smooth.

7. Stack the dough pieces together (you can apply some water in the middle) and cut off the irregular edges and corners.

8. Cut into two pieces in the middle, stack them together again and refrigerate for 30 minutes.

9. Take out the dough and cut it into three slices about half a centimeter thick with a knife.

10. Apply some clean water to the connected parts of the dough and press the dough with your hands.

11. Put it into the noodle press, press it smooth, change to gear 2, press it thinner, and cut it into rectangles or trapezoids.

12. Wrap into wontons and cook until done.
