How to make pork and bean dumplings

1. It’s usually late when I get home from get off work, so for convenience, I go to the supermarket to buy chopped pork filling, 5:5 fat and lean meat. The dumpling filling must have fat to be delicious and not dry. If you have time on the weekend, it will be better to chop the filling yourself. (The eggs and dried shrimps will be added in the picture below.)

2. Wash the beans, remove the two ends, remove the old tendons, lay them flat and cut them diagonally into thin slices or filaments

3. Cut into small pieces, depending on your taste. If you like thicker pieces, cut them larger. My pork filling is very thin, so I cut it thinner.

4. After all the cuts are done, add a small spoonful of salt, stir evenly and marinate to drain the water. Now you can prepare the meat filling.

5. Put the pork in a slightly larger bowl, prepare an egg, chopped green onion and ginger, and an almost equal amount of dried shrimps.

6. Add eggs to the meat filling and stir in a clockwise direction with more force to allow the meat to absorb all the egg liquid.

7. Add chopped green onion, ginger, dried shrimps and a spoonful of light soy sauce.

8. Add half a spoon of sesame oil

9. Add a small amount of white pepper

10. Stir evenly in clockwise direction

11. Squeeze excess water from the marinated beans and add them to the minced meat.

12. Stir clockwise until evenly mixed.

13.Put appropriate amount of fillings on the dumpling skin.

14. Wrap it up ~ The ready-made dumpling wrappers I bought from the supermarket are not easy to stick together when wrapping. You can dip them in a little water to make it easier to stick together ~

15. Wrap all the dumplings and prepare to cook~

16. Add half or two-thirds of water to the pot and bring to a boil.

17. Put the dumplings in, don't pour them all at once, be gentle~ add a little sesame oil or cooking oil on top to prevent them from sticking

18. After adding the food, use a spatula or spoon to push the bottom of the pot to prevent it from sticking.

19. During the cooking process, add a small bowl of cold water when the pot boils, add it twice, and simmer it for a while. When all the dumplings float up, they are cooked.

20. The dipping sauce I made is very simple, aged vinegar and Lao Gan Ma ~ spicy and sour, my favorite!
