11.2 After the third dough kneading process, I switched to manual kneading. Many novices rely more on machines when making bread. In fact, after the bread machine has been kneading for 45 minutes, the bread may form a film at any time, but it is difficult for us to control this state using a machine, so it would be easier to control it by hand at this time. Knead the dough like you wash or fold clothes, and then add the action of thrashing the dough. As shown in the picture, use your arm as the center to throw the dough out. Since the dough has gluten, it will be stretched. Fold the dough and thrash it again, kneading the dough in between. Generally, 100 thrashings will be enough, but sometimes you may have to thrash it 150-200 times, depending on the specific situation at the time.

12. After shaping, carry out the first fermentation. About 1.5-2.5 times larger.

13. Take out the fermented dough and flatten it to release the air.

14. Divide the dough into three equal parts, take one of them, cup your hand, press the dough, and knead it clockwise into a smooth small dough.

15. After the dough is shaped, let it relax for 10 minutes.

16. Reshape and put it into the toast box, continue the second fermentation and bake, and set the oven temperature to 180 degrees.
