What are the vegetarian dishes for hot pot?

When the weather gets cooler, we love to eat hotpot. Eating hot pot not only allows you to eat a variety of food, but it is also a pleasure to eat hot pot with family and friends. Nowadays, when people eat hotpot, they will prepare many dishes. But the vegetables that remain invincible are still the ones we are more familiar with. So, what are the vegetarian dishes for hot pot? Let’s take a look at the knowledge compiled by the editor below!

What vegetables should I buy to cook hot pot at home

It depends on personal preference. Generally speaking, these are common and suitable ingredients for hot pot.

1. Meat

Such as beef, mutton, pork, pork offal, pig tongue, pork liver, bacon, luncheon meat, tripe, yellow throat, duck intestines, chicken wings, crispy sausage, quail eggs, ham, sausage, liver tendon, bullfrog, etc.

In fact, any meat is suitable for hot pot. Beef, pork and lamb are best sliced thinly in advance (you can buy them ready-made at the supermarket), and they can usually be eaten after just a few seconds of boiling. Cut luncheon meat, ham, etc. into thick slices.

Beef is a must-have dish for hot pot, and the beef usually used in hot pot is fatty. If you can't buy fatty beef, you can use beef ribs or beef balls. It usually takes four to five minutes for beef balls to be cooked through.

mutton. Mutton is also an indispensable meat. Like fatty beef, the mutton commonly used in hot pot is called fat sheep (meat from the lamb thigh and shoulder). It can be bought in general supermarkets.

If you like to eat offal. It is best to put ingredients such as pig offal, pig tongue, and pig liver in salt water or wine to remove the fishy smell before putting them into the hot pot. If you can buy duck intestines at the vegetable market, when cooking them in a hot pot, remember the "seven ups and eight downs" method. Use chopsticks to pick up the duck intestines, put them in the pot and blanch them for one to two seconds, then pick them up. Repeat eight times. The duck intestines cooked in this way will be crispy when eaten.

2. Seafood

Such as crab meat, fish balls, scallops, oysters, squid, shrimps, cod fillets, etc.

Like meat, there are many kinds of seafood that can be put in hot pot. The seafood here is divided into two types: one is fresh seafood, and the other is semi-finished seafood like fish balls.

Fish is usually sliced thinly, and because it cooks quickly, it is best placed behind a colander before adding it to the hot pot. Eat immediately after serving.

Shellfish. For example, shrimp, scallops, crabs, oysters, clams, mussels, and shrimp are the most common side dishes, and shrimp are usually cooked with their shells (with or without their heads). Remember to put shellfish in a basin of water in advance so that they can spit out the sand.

Squid and cuttlefish. Use both fresh and dried. It can add a unique flavor to hot pot soup. If using fresh cuttlefish, make sure it is cleaned thoroughly. Dried squid is a little more troublesome and needs to be soaked in water for 24 hours before use.

Fish balls and fish cakes. This kind of ingredient can be bought in supermarkets, and the fish balls have a chewy and smooth texture. Since the fish balls are already cooked, they don’t need to be cooked for too long (except for frozen fish balls).

3. Vegetables

Such as white radish, carrot, tomato, bamboo shoots, lettuce, leek, potato, yam, kelp, lotus root, cucumber, winter melon, lettuce, spinach, cabbage, water spinach, broccoli, coriander, etc.

Seafood and meat are the protagonists of hot pot, but hot pot is incomplete without vegetables. Vegetables can not only relieve greasiness, but also enrich the taste of the soup. You can add any vegetables to the hot pot, but I prefer those that can retain their texture even after being cooked for a long time. Leafy vegetables. For example, spinach, lettuce, and wormwood will wilt once they come into contact with soup, so just cook them for two or three minutes. This type of vegetable tastes better when put in a clear soup pot. If you eat a spicy hot pot, the leaves will be covered with chili oil and will taste spicier. If you like spicy food, you can try it.

4. Mushrooms

Such as mushrooms, shiitake mushrooms, oyster mushrooms, enoki mushrooms, king oyster mushrooms, fresh mushrooms, phoenix tail mushrooms, straw mushrooms, tea tree mushrooms, etc.

It is best to cut larger mushrooms such as shiitake mushrooms in half before throwing them into the hot pot. Such mushrooms take 3-4 minutes to cook. Enoki mushrooms cook very quickly, in about 30 seconds.

5. Soy products

Such as soybean sprouts, mung bean sprouts, tofu, dried tofu, bean skin, firm tofu, fried tofu, bean curd sticks, konjac shreds, etc.

6. Staple food

If you are worried about not having enough food, use the remaining soup to cook noodles after finishing the above ingredients. You can add some hot pot noodles, instant noodles, sweet potato noodles, wide noodles, vermicelli, hand-kneaded noodles, gluten, etc. appropriately.
