Eating mooncakes during the Mid-Autumn Festival has been a tradition of the Chinese nation for thousands of years. Today, mooncakes have developed into many varieties with a wide variety of flavors. For example, the ham mooncakes that have become popular in recent years, how are they made?

How to make ham mooncakes

Material

Pastry ingredients: 125g mooncake syrup, 150g low flour, 3g soap water, 37g peanut oil

60g frozen meat (see the chicken biscuits post for the method of making frozen meat), 1 bottle cap of Fenjiu, 50g melon seeds, 50g almonds, 50g walnuts, 55g pine nuts, 20g white sesame seeds, 20g scallops, 50g Jinhua ham, 10g soy sauce, 1/4 teaspoon salt, 110g sugar, a teaspoon of sesame paste, 1/4 teaspoon pepper, 1/4 teaspoon five-spice powder, 12.5g cooked peanut oil, 1-2 sugar oranges, 40g water (I used the water from steaming scallops and ham instead), 100g cooked glutinous rice flour

1. Preparation of fillings: marinate the frozen meat at least one day in advance, steam the ham and cut into strips, steam the scallops with water, tear into pieces and fry until fragrant, roast the five kernels separately, cut the tangerines into pieces with scissors and remove the cores, mix the above ingredients with seasoning, oil and water, mix well and finally add the cooked glutinous rice flour and stir into a dough. Let it stand for 40 minutes and then divide into 12 equal portions, 55 grams each.

2. Making the crust: Mix syrup, oil and soap water, then add low flour and knead into a uniform dough. After the dough is kneaded, it needs to be left to stand for 3 to 4 hours. Some students don’t understand why the dough needs to be left to stand. Here is a brief explanation: the purpose of leaving it to stand is to prevent the dough from sticking to your hands. After standing, divide the crust into equal parts. I have 20 grams of crust per piece.

【Mooncake Making】:

1. Once the materials are prepared, you can start wrapping. The first step is to divide the filling and the dough into equal parts.

2. Take a piece of skin, press it into a round shape and put the filling on it.

3. Use your hands to slowly push the dough so that it evenly wraps the filling.

4. Don’t be impatient, push slowly, little by little, until the pastry completely covers the filling. Be careful not to leak the filling, and fill it if there is any leakage.

5. Put the wrapped dough into the mooncake mold and be careful to flatten the bottom.

6. Cover the baking tray with tin foil and press the mooncakes onto the baking tray using the mold. Keep a certain distance between the cakes.

7. Preheat the oven and spray water on the mooncakes. Bake in the oven at 210°C until the mooncakes are slightly colored. This process takes about 10 minutes.

8. Take out the mooncakes and brush them with egg liquid, then put them back into the oven and continue baking for about ten minutes until they are colored. Bake until the surface turns apricot skin color.
