Wash the clams and blanch them in boiling water (add a little rice wine when the water boils). Take them out as soon as the shells open. 2. Remove the black line around the edge of the clam meat (see the picture, I don't know what it's called), and drain the water. 3. Chop the garlic into small pieces and the ginger into shreds, using more than normal cooking. 4. Heat the pan with cold oil, add dried chili peppers, Sichuan peppercorns, ginger, garlic, and sauté over low heat. 5. Pour in the drained clams, stir-fry over high heat for a few times, spray a small amount of rice wine, add salt and Sichuan pepper powder, sprinkle with onions, and remove from the pan.
