It can be dosed and formed. Sometimes, the raw noodles need to be left to rest for 5-10 minutes after being formed, which is called "resting the noodles" before being put into the pot to cook.

The opposite of leavened dough are: 1. Water dough 1. Cold water dough, such as noodles; 2. Warm water dough, such as pancakes; 3. Hot water dough, such as steamed dumplings. 2. Shortbread dough, such as shortbread pancakes. During the making process of these doughs, the dough needs to be "rested" after kneading. It also needs to be "rested" after being shaped and before being baked. Pastry making is a technical job and is also a very interesting thing.
