1. Ingredients: eggplant, green and red peppers, Danxian bean paste, onion, ginger, garlic, a small amount of minced meat

2.1 Chop the minced meat and chopped green onion for later use

3.2 Divide an eggplant into several pieces and tear it into strips by hand. Add salt and rub lightly a few times. This way the fried eggplant won’t absorb too much oil.

4. When the oil is 80% hot, add the eggplant. When the eggplant becomes soft and has a light yellow skin, you can remove it and drain the oil.

5. Pour out the oil in the pan, leaving some, add minced meat, green onion and ginger and stir-fry until fragrant, add eggplant and stir-fry for a while, add Beixian bean paste and continue to stir-fry for one minute, so that the eggplant strips are evenly coated with bean paste, no need to add salt

6. Place the eggplant on a plate, chop the green and red peppers, garlic and coriander and arrange on a plate.
