Method 1

2. Peel the potatoes and cut them into strips. The thickness should be similar to that of the potato strips you eat in fast food restaurants. Rinse the starch on the surface with clean water. If you want to keep them for a long time, soak them in clean water to prevent oxidation and discoloration. Remove the seeds and tendons from the red pepper and cut them into strips. Cut the celery into sections. Cut the dried chili into sections with scissors.

1. Peel and wash the best potatoes (sweet potatoes), cut into strips, fry them in salad oil and set aside. Cut the best winter bamboo shoots (or cooked cauliflower) and cucumber into strips, cut celery into strips, cut green onions into sections, slice a little ginger and garlic, and cut the green onions into flowers and set aside.

2. Clean the live prawns, then make a cut on the back of each prawn (a larger cut is better for easier flavor) and fry them in salad oil (a small amount of oil can be used at home).

3. Set up a wok, add a mixture of chili oil and salad oil (the ratio is 1/4), add star anise, cinnamon, cardamom, white pepper, and fry until fragrant, then remove from the pan, add green onion, ginger, garlic, and then add the fried shrimp, potatoes (sweet potatoes), winter bamboo shoots (cauliflower), cucumber, and celery, and stir-fry back and forth.
