How to cook dry roasted carp

1. Ingredients: live carp, pork fat, pickled mustard, carrot, dried red pepper, onion, ginger, oil, salt, garlic, soy sauce, white sugar, vinegar, cooking wine, chicken stock

2. Remove the gills, scales and internal organs of the carp and clean it.

3. Cut the same oblique knife again, marinate with cooking wine and salt for a while

4. Dice the fat and carrots

5. Dice the mustard tuber, green onion, ginger, and dried red pepper, and chop the coriander into fine pieces

6. Heat the oil in the pan to 80% and add the fish

7. Fry until golden brown and remove

8. Leave some oil in the pan, add onion, ginger, dried red pepper, diced fat, pickled mustard and diced carrots

9. Stir-fry for a while

10. Put the fish skin side down.

11. Add cooking wine, soy sauce, sugar, rice vinegar, onion water and salt

12. Bring to a boil over high heat

13. Cover and simmer for a while to make it fully flavored.

14. Add minced garlic and chicken essence, cook over high heat until the soup thickens, add chopped coriander and serve
