How to make fish-flavored chicken

2.2 Cut the chicken into 1cm cubes, cut the green pepper, red pepper and onion into 1cm cubes, chop the green onion, chop the pickled ginger, ginger, pickled chili and garlic into cubes, and chop the Pixian bean paste into small pieces.

3.1 Add a little salt to the chopped green pepper, red pepper and onion and mix well

4.2 Add a teaspoon of starch, a little salt, ginger rice, and a few drops of water to the chopped chicken. Mix well with your hands and stir in one direction.

5. Use a small bowl to put a teaspoon of starch, a tablespoon of soy sauce, a teaspoon of vinegar, a tablespoon of oyster sauce, a teaspoon of sugar, a little MSG, and a tablespoon of water to make fish sauce for later use. Be sure to stir it, otherwise the sugar will not dissolve.

6. Heat the oil in a wok until it is 70% to 80% hot, pour in the marinated diced chicken and stir-fry quickly for a few times, add the Pixian bean paste, pickled ginger, pickled chili peppers, and minced garlic and stir-fry quickly for a few times. When the Pixian bean paste starts to produce red oil, scoop out the diced chicken and leave the oil in the wok (this is the second step of the two extra steps I mentioned). Because there is a temperature difference when the side dishes are poured in, and there is more or less moisture in the side dishes, it is impossible to have such a big fire at home as in the restaurant, which will cause the meat to be fried for a longer time and become old.

7. Add green pepper, red pepper and onion and stir fry for a few times

8. Pour the scooped chicken cubes back in and quickly stir-fry with green pepper, red pepper and onion.

9. Pour in the peanuts and the fish sauce, stir fry for a few times, then sprinkle with chopped green onions.
