7. Adding an appropriate amount of cooking wine can remove the fishy smell of the ribs.

8. Add appropriate amount of dark soy sauce to make the ribs more beautiful in color and more flavorful. After the water boils, simmer over medium heat.

9. When the soup is reduced by half, pour in the yam. If you add the yam too early, it will easily be overcooked; if you add it too late, it will not be easy to cook and absorb the flavor, so it is best to add it when the soup is reduced by half.

10. When the soup is almost gone, turn to high heat to reduce the soup. Only by using high heat to reduce the soup can the ribs have a more beautiful color.

11. Stir with a spoon while the sauce is collected to prevent the pot from sticking. The sauce is dried up. If you like to mix it with rice, you can leave a little sauce to mix it with rice.

12. Place the ribs on a plate, sprinkle with a little chopped green onion, and enjoy.
