How to cook lumps

Gedada is a kind of northern pasta, which is generally used to make gedada soup. There are red date gedada soup and tomato gedada soup. When making these foods, you need to choose the gedada and then cook the ingredients and the gedada into soup. When cooking red dates with dumplings, we should remove the date pits, then boil the red dates, mix the flour and make dumplings, and then put the dumplings into the red date soup and cook them.

【1. Red Dates and Dumplings Soup】

Ingredients: 8 fresh dates, 200 grams of flour, and appropriate amount of brown sugar.

1. Soak the red dates for 10 minutes, wash them, break them apart and remove the pits, add appropriate amount of water, bring to a boil over high heat, then simmer over low heat for 12 minutes.

2. Put an appropriate amount of flour into a large bowl, add tap water, pay attention to controlling the water flow, stir quickly while adding, until it becomes a dry snowflake shape.

3. Put the dough into the red date soup pot, stir while boiling for about 2 minutes.

【2. Tomato Dumpling Soup】

Ingredients: 100 grams of flour, 2 tomatoes, 1 shallot, 2 cloves of garlic, 2 tablespoons of tomato sauce, 1 egg, 1/2 teaspoon of salt, 1/2 teaspoon of sesame oil, 1 teaspoon of cooking oil.

1. Wash and peel the tomatoes, cut into small dices, chop the green onions, mince the garlic, and beat the eggs for later use.

2. Put the flour into a large bowl and add appropriate amount of cold water in small amounts several times. While adding water, use chopsticks to beat it into uniform snowflakes of your preferred size until no dry powder is visible.

3. Add cold oil to a hot pan and stir-fry chopped green onions over low heat.

4. Add diced tomatoes, turn to high heat and stir-fry, using a spatula to press out the juice while stir-frying.

5. Add about 2 tablespoons of tomato sauce.

6. Continue to stir-fry until the color turns bright red.

7. Add appropriate amount of boiling water, according to your taste: add less if you like thick soup, add more if you like clear soup. Try to add enough at one time and avoid adding water in the middle.

8. After boiling over high heat, add the dough in small amounts at a time, stirring as you add to prevent it from sticking to the pan.

9. Continue to boil over high heat for 1 or 2 minutes, then add the egg drops while it is boiling.

10. Add appropriate amount of salt for seasoning.

11. Add minced garlic, bring to a boil again, then turn off the heat.

12. Add a few drops of sesame oil.

【3. Shrimp and spinach dumpling soup】

Ingredients: 230 grams of flour, 100 grams of shrimp, 250 grams of spinach, 10 grams of refined salt, 3 grams of MSG, 5 grams of sesame oil, and appropriate amount of water.

1. Ingredients: shrimp, spinach, noodles.

2. Pour clean water into the flour little by little, stirring with chopsticks while pouring, until it becomes lumps the size of beans or small peanuts, and continue stirring until there is no dry flour left.

3. Wash the spinach with clean water.

4. Put water in the pot and bring it to a boil, then add the spinach and blanch it.

5. Cool the blanched spinach with cold water and remove it.

6. Squeeze out the water and cut into small pieces for later use.

7. Put appropriate amount of water in the pot and bring to boil.

8. Add the shrimps and slowly pour the dough into the pot, pushing it with a spoon as you pour it to prevent the dough from sticking together.

9. After boiling again, the dough lumps float up, add spinach, salt and MSG.

10. Add sesame oil.

11. After boiling, the dumpling soup is cooked.

12. Put it in a bowl and eat.

【4. Millet Dumpling Soup】

Ingredients: 40 grams of millet, 50 grams of flour, 120 grams of tomatoes, 4 grams of salt, 5 grams of onions, 1 egg, 15 ml of corn oil.

1. Peel and dice the tomatoes and slice the green onions.

2. Crack an egg into a bowl and beat it.

3. Pour the washed millet into a pot of boiling water and cook for 5 minutes.

4. Take a slightly larger bowl and fill it with dry flour.

5. Use a colander to scoop out the millet that has been cooked for 5 minutes and pour it on the dry flour.

6. Stir with three chopsticks until each millet grain is covered with flour.

7. Heat the cast iron pan, add corn oil and stir-fry with chopped green onion.

8. Put tomatoes into the pot and stir-fry until red oil comes out, then pour in clean water.

9. After the water boils, cook for a while and then pour in the blended millet dumplings (stir with chopsticks while pouring).

10. Boil the dumplings for a while, add salt and pour in the egg liquid.

11. A pot of millet dumpling soup with uniform grains is ready.

【5. Clam and Dumpling Soup】

Ingredients: 500 grams of clams, 250 grams of wheat flour, 200 grams of tomatoes, 150 grams of eggs, 8 grams of coriander, 5 grams of fungus (dried), 5 grams of green onions, 4 grams of ginger, 3 grams of salt, and 3 grams of pepper.

practice:

1. Chop coriander, soak fungus, and chop green onion and ginger. After the live clams spit out the mud and sand, wash them, put them in boiling water and boil them until they open, take out the clam meat, put it into the original soup to wash the sand, and soak it for later use.

2. Put the flour into a bowl, pour water on it, and stir it into even dough balls; wash and dice the tomatoes, and cut the fungus into shreds.

3. Pour oil into a wok and heat it up, add chopped scallion and ginger, stir-fry tomatoes first, add appropriate amount of fresh soup and clam soup, then add black fungus and bring to a boil, sprinkle in the dough balls, separate them, add clam meat, pour egg liquid, add salt and pepper, sprinkle with chopped coriander and serve.
