Sichuan salad seasoning recipe

1. How to make Sichuan red oil - a must-have for cold dishes

Method/Steps:

1 Pour oil into the pot, add scallion and ginger slices, and heat slowly over medium-low heat.

2 When tiny bubbles start to rise from the bottom of the pot, turn the heat down to minimum.

3. Then add the spices (except chili and sesame).

Note:

Using a non-stick pan to make red oil can avoid the trouble of always stirring. It is best to use a cast iron pot, which heats evenly, has a high boiling point and is less likely to splash. Before trying the cardamom, you can use a knife to slightly press the shell to break it so that the flavor can be released more easily. Pour the prepared red oil into a dry bottle and store it in the refrigerator.

3. Shrimp sauce

The ingredients include shrimp roe, salt, MSG, sesame oil, Shaoxing wine, and fresh soup. The method is to first fry the shrimp roe with sesame oil and then add seasonings and boil them. It has a white, salty and fresh taste. It can be used to mix with both vegetarian and meat dishes, such as: shrimp oil bamboo shoots, shrimp oil chicken slices.

4. Garlic juice

The ingredients are raw garlic cloves, salt, MSG, sesame oil, and fresh soup. Mash the garlic cloves into a paste, add seasonings and fresh soup to mix it into a white color. It can be mixed with both meat and vegetables, such as: garlic mashed seafood, garlic mashed beans, etc.

5. Spicy sauce

The ingredients are soy sauce, vinegar, sugar, salt, MSG, chili oil, sesame oil, pepper powder, sesame powder, onion, garlic, and ginger. Just mix the above ingredients.
