How to make Italian handmade noodles

1. Mix the two flours evenly, add salt, add eggs one by one, and use a fork to stir the eggs and flour slightly.

2.1 Take the dough out of the refrigerator 10 minutes before making the noodles. Follow the instructions on your noodle machine and cut off a piece of dough

3.2 Place the dough on a floured work surface and knead until the flour is slightly moist but not sticky. Wrap in cling film and refrigerate for 1 hour

4. Press into dough sheet. Generally, the thickness of dough sheets produced by noodle making machines is divided into 9-10 different levels, and you can decide the thickness according to your personal preference. I usually only press the pressure to level 6 when making lasagna. If it is spaghetti, just press it to level 4.

5. Place the pressed dough on a floured work surface and sprinkle some more flour on it to prevent the noodles from sticking together when cutting. Finally, use the cutter on the noodle making machine to cut it.

6. Place the prepared noodles on a drying rack for at least 1 hour to remove moisture and prevent the noodles from sticking together. If you want the noodles to last a little longer, you need to dry them out longer. Usually if you let it air dry for 5-6 hours, then it is no problem to store it at room temperature for 7-10 days
