2. How to cook pork ribs stewed with kelp

1. Most of the kelp currently available in the market is salted kelp, so the first step is to soak the kelp to remove excess salt after salting. This work needs to be done about three hours in advance to prevent the kelp from being too salty and affecting the taste.

2. Currently, the kelp on the market is in whole pieces. Next, you need to cut the kelp into shreds, which will make it easier to absorb the flavor.

3. After cutting the purchased ribs into sections, marinate them with a small amount of salt first, then put boiling water in the pot to blanch them in order to wash away the original blood in the ribs and prevent the soup from becoming turbid later.

4. Heat the pan, add oil, put in the ribs and fry over low heat. Fry until both sides of the ribs are golden brown and the surface of the ribs are evenly coated with oil. Then add cooking wine and dark soy sauce and continue to stir-fry for a while to color the ribs.

5. Next, start stewing the ribs. Add the scallion segments and ginger slices prepared in advance, and then add hot water. The amount of water should just cover the ribs. The next step is to stew it. Bring it to a boil over high heat, skim off the foam, then simmer over low heat for 1 hour. Until the ribs are tender.

3. Precautions for stewing pork ribs with kelp

1. Both kelp and ribs need to be blanched, mainly to remove the blood from the ribs and the excess salt from the kelp.

3. When coloring the meat, you can use dark soy sauce or rock sugar. The difference between the two is that using rock sugar makes the meat red and tender, while using dark soy sauce makes the meat brown.
