How to make whole wheat raisin bread

1. Mix all the ingredients except raisins and knead until the dough can be stretched into a thin film. When the weather is cold, you can first take half of the water in the recipe (warm water around 40 degrees is best), dissolve the yeast, and let it stand for 20 minutes. I knead the dough by hand and it takes about 40 minutes to form a film. After kneading, add raisins and knead for two minutes until combined.

2. Place the kneaded dough in a warm place and let it ferment until it is 2-2.5 times larger.

3. Take out the fermented dough, deflate it, and relax it for 15 minutes. Use a rolling pin to roll it into an oval shape, roll it into an olive shape from top to bottom, put it into a baking tray, and put it in the oven to ferment until it is twice as large. Usually about an hour. Without turning on the oven, place a large bowl of hot water in it. (If the weather is particularly cold, you can turn on the oven fermentation function)

4. Use a sharp knife to cut three 0.5 cm deep slits on the fermented dough. Sift a small amount of flour for decoration. Bake in a preheated oven at 200 degrees for about 30 minutes until brown.

5. The baked bread has a crispy crust, soft inside and a strong wheat flavor. If you can’t finish it, keep it sealed. Do not refrigerate.
