2. How to cook chicken with Tianma

1. Kill and clean the local chicken; rinse the red dates and wolfberries with clean water.

2. Soak the Gastrodia elata in advance with a little sugar.

3. Add water to the pot and bring it to a boil, then add cooking wine (5g), then put the cleaned native chicken into the pot and cook.

4. Turn off the heat after the blood foam and dirt are cooked away, remove from the pot and rinse clean.

5. Cut the soaked Gastrodia elata into thin slices. I cut it into about 6 slices; 2 slices of ginger.

6. Put all the ingredients into the casserole, add cooking wine, cover with water, bring to a boil over high heat, then turn to low heat and simmer for about 1 hour. After stewing, add appropriate amount of salt. (The chicken I bought was a little too big, so I had to turn it over halfway through stewing to avoid trouble. When you pour in clean water, remember to keep the water below the chicken.)
