How to cook rooster and chestnuts

Method 1

Ingredients: 1000g hen, 200g chestnuts (fresh), 10g starch (broad beans), 2g salt, 50g vegetable oil, 30g soy sauce, 25g shallots, 20g lard (refined).

1. Wash the hen, split the head and claws in half, cut the breast and wings into 6 pieces, cut the other parts into 3 cm square pieces, chop the chicken legs into two sections, chop the chicken neck into 4 cm sections, break the chicken wrist into 4 pieces, and cut small square patterns.

2. Cut the chestnut shell into a cross shape with a knife, put it into a boiling water pot and cook it over high heat for 5 minutes, then take it out and shell it.

3. Place the wok on high heat, pour in vegetable oil and heat until 70% hot, add the chicken pieces and fry for 5 minutes.

4. Pour out the oil from the pot, add 600 ml chicken broth, chestnuts, soy sauce, salt, sugar, chicken gizzards, chicken liver and chicken chunks and cook over high heat for 10 minutes until the meat is tender and the chestnuts are glutinous. Then add cooked lard, MSG, scallion segments, thicken with wet starch, remove from the pot and serve.

Method 2

Ingredients: a young hen (weighing about 1000 grams), 200 grams of chestnuts, 250 grams of sesame oil (about 75 grams consumed), appropriate amounts of lard, chicken broth, MSG, sugar, wet starch, nitrate water, soy sauce, refined salt, and garlic.

1. Kill the hen, remove the internal organs, head, claws, wash it, and cut off the neck. Split the chicken in half, cut the breast and wings into six pieces, cut the other parts into 2.4 cm square pieces, cut the chicken legs into two sections, cut the chicken neck into 3 cm long segments, cut the chicken wrist into four pieces, cut into small squares, use a knife to cut the shell of the chestnut into a straight shape, put it in a pot of boiling water, cook on high heat for 5 minutes, take out the shell, and peel off the inner skin;

Place the wok on high heat, add sesame oil and heat it to 70% hot, put in the chicken and fry for 5 minutes, then remove with a colander, drain off the remaining oil in the wok, add chicken broth, chestnuts, soy sauce, salt, sugar, chicken pus, and liver, and simmer on high heat for 10 minutes until the meat is tender and the chestnuts are glutinous, then add lard, MSG, and garlic, dilute with wet starch and thicken, then serve.
