How to make cold sweet potato noodles

An unhealthy diet often becomes a triggering factor for disease. If we don’t want to have problems with our bodies, we should not eat out casually. It is better to cook by ourselves if possible. The method of making cold sweet potato noodles is relatively simple. Even if you don’t cook much, you can master it through simple learning.

2. A handful of sweet potato flour. Mine is harder.

3. Soak in cold water until soft, then remove and drain.

4. Cut carrots into shreds and wash and drain mung bean sprouts.

5. Prepare a large bowl of cold white wine and set it aside. Boil water in a pot, add the sweet potato flour and blanch it for a while, then add the mung bean sprouts and shredded carrots and blanch for half a minute before taking them all out.

6. After blanching, take out and put into the prepared cold boiled water, stir, cool down, then take out and drain the water.

7. Chop the garlic into puree and cut the green onion into flowers.

8. Pour the drained sweet potato flour, mung bean sprouts, and carrots into a larger container, add minced garlic, chopped green onions, a large spoonful of seafood soy sauce, a little sugar, appropriate amount of salt, a little white pepper and cumin powder, a large spoonful of chili oil and a spoonful of cooking oil. (I used rapeseed oil, which I cooked over low heat with Sichuan peppercorns in advance. You can also use olive oil, salad oil, or sesame oil.)

9. Mix well, then add crushed peanuts and mix well! (I roasted the peanuts in the oven and then let them cool before removing the red skin! I usually roast them and seal them for snacks. You can also use a little oil to fry the raw peanuts until fragrant. If you find it troublesome, you can just use cooked white sesame seeds instead!)
