How to make pork and cabbage buns

1. Add 3 grams of yeast to 300 grams of flour

3. Knead into a smooth and non-sticky dough. The weather is cool and the temperature is low now, so try to make the dough softer so that it can rise. Cover with a cloth and place in a warm place to ferment until it doubles in size (about two hours)

4. Use the time for the dough to rise to prepare the filling: Wash the pork belly and cut it into 1 cm square cubes.

6. Add chopped green onion and ginger to the diced meat, and then add oyster sauce, salt, soy sauce, cooking oil, chicken powder, white pepper powder, cooking wine and five-spice powder, and mix well.

7. Marinate the mixed meat for half an hour

8. Wash the cabbage, chop it lightly with a knife, add half a spoonful of salt and chop it into small pieces (adding salt to the cabbage makes it easier to squeeze out the water).

9. Use a clean cloth to squeeze out excess water from the chopped cabbage.

10. Add to the meat filling in step 7 and mix well

12. Take out the dough, release the air, and knead it for about ten minutes until it becomes long strips.

13. Use a knife to cut into small pieces of uniform size

14. Take a small dough and flatten it. Then use a rolling pin to roll it into a bun skin that is thick in the middle and thin on both sides. Don’t make it too thin.

15. Put appropriate amount of fillings into the bun skin

16. Use your thumb and index finger to create folds

17. Seal the mouth and a bun is ready.

18. Let the wrapped buns rise for a second time for 15 minutes. Boil water in a pot, put in a wet cloth, put the buns in and cover. Start timing steaming for 20 minutes and simmering for 3 minutes
