You might as well make more use of them in daily life. The method of making spicy red oil dumplings is very simple. Even if you don’t cook much, it is easy to learn. 1. Pour the flour into a larger bowl and stir it into flocs while adding clean water. Both cold and warm water are acceptable. 2. Knead into smooth dough with your hands. Cover with damp cloth and let rise for one or two hours. (It’s OK if you don’t wake up) 3. Prepare the meat filling. Chop the pork into minced meat for later use. Even if I ask the butcher to mince the meat, I will process it myself. This way the meat tastes better. 4. Slice the ginger, flatten the garlic, and add peppercorns and star anise bay leaves as desired. 5. Pour a little oil into the pan and heat it up, then pour in the ingredients. Stir-fry over low heat until fragrant, then remove the spices and leave only the oil to cool and use it to mix the meat filling later. 6. Put the minced meat in a bowl, add appropriate amount of salt, light soy sauce, oyster sauce, a little sugar, pepper, chicken essence, freshly cooled oil, 1 egg, and appropriate amount of chopped green onion. 7. Beat in one direction until firm. Set the prepared pork filling aside for later use. 8. Flatten the dough and use a noodle machine to press it into thin slices. I used two types: level 4 and level 33. The thickness is up to you. (If you don't have a dough sheeter, you can use a dough roll to roll it into thin sheets and then press it into a round shape, or roll it into small strips, cut it into small pieces and roll it into a round shape) 9. Use a round shape of appropriate size to press out the dumpling skin. I don’t have a special mold, so I used a bottle cap. 10. The finished dumpling wrapper. 11. Put appropriate amount of meat filling in the middle. 12. Fold the middle part towards the middle and pinch out pleats. 13. Pinch the other side towards the middle. 14. Finish making all the dumplings. 15. Bring water to a boil in a pot, add appropriate amount of dumplings, shake the pot a few times to prevent them from sticking to the pot, bring to a boil over high heat, add a little bit of water and bring to a boil, then add a little more water, and repeat several times. 16. Cut the green onion into flowers and chop the garlic into paste. 17. Put mashed garlic in a bowl, add a small amount of light soy sauce, chicken essence, appropriate amount of salt, a little sesame oil, sugar, appropriate amount of balsamic vinegar, and optional pepper powder, and set aside. 18. Bring water to a boil in a pot, add appropriate amount of dumplings, bring to a boil over high heat, add a little water and bring to a boil again, then add a little more water and bring to a boil, repeat 2-3 times until the dumplings are cooked. 19. Put the cooked dumplings into a seasoning bowl, add appropriate amount of chili oil and sprinkle with chopped green onions, and you’re done! 20. Let’s eat! The spicy red oil dumplings are great! 21.
