Ingredients: 3 eggs 60g glutinous rice flour 20g low-gluten flour

1 apple

Seasoning: 30g salad oil, 35g milk, 40g granulated sugar, 100ml water, 1 tsp white sugar, a few drops of lemon juice

How to make glutinous rice cake

Preparation: Peel and core an apple, cut it into pieces, add 100 ml of water, 1 teaspoon of sugar and a few drops of lemon juice into a soup pot and cook until soft. Remove from the water and blend it into a sticky paste using a food processor.

1. Beat the egg whites with an electric whisk until they are coarse foams

2. Add fine sugar in 3 times

3. Beat the egg whites until dry

4. Add egg yolk and continue beating

5. Beat until the egg mixture drips very slowly when the egg beater is lifted.

6. Sift in the flour in 3 times and stir with a spatula to make a batter without dry powder.

7. Stir the milk and salad oil for a few times, then add a small amount of batter and mix well

8. Pour the mixture from step 7 into the remaining batter, stir evenly with a spatula, and pour into the mold until 80% full.

9. Preheat the oven to 180 degrees, top and bottom heat, middle layer for 18 minutes, then let it cool.

10. Put the applesauce into the piping bag and cut a small hole of about 3 mm at the tip of the piping bag.

11. Squeeze the applesauce into the small cakes.
