Steps for making scrambled eggs with tomatoes (homemade version)

Choose soft tomatoes, not angular ones, as they tend to have less juice and aren't as tasty. Cut the tomatoes into chunks; I was too lazy to peel them, but you can peel them beforehand if you don't like the skin.

This cutting method ensures that the tomato pulp fully contacts the oil; if it's encased in the skin, it will result in a very sour dish.

Add a small spoonful of salt (I prefer a milder taste, so this small spoonful is enough; you can adjust the amount according to your own taste) and a small spoonful of sugar (optional) to the chopped tomatoes, then mix well.

Prepare the eggs and beat them. By this time, the tomato pulp and juice will have released. Pour them into another small bowl.

Heat a small amount of oil in a pan, scramble the eggs until set, then pour them back into the original bowl. No need to wash the pan; just wipe off any egg bits with kitchen paper. Otherwise, if you heat oil again later, the egg bits will burn and produce carcinogens.

Add more oil than you used for frying the eggs. Once the oil is hot, add the tomatoes. Remember, add the tomatoes only when the oil is quite hot (otherwise they'll boil). Stir-fry until the tomatoes soften and release their juices.

Pour in the scrambled eggs, stir-fry for a while, then pour in the reserved broth. Stir-fry until the broth thickens, then it's ready to serve! If you like scallions, you can add chopped scallions at this step.
