Make incisions on the chicken thighs to help them absorb the flavors faster. Prepare chopped scallions, sliced ginger, salt, and Sichuan peppercorns.

Heat a non-stick pan without oil, add salt and Sichuan peppercorns, stir-fry over low heat until the salt turns slightly yellow, then turn off the heat.

Pour the stir-fried salt and pepper over the chicken legs, rub it evenly on both sides, cover with plastic wrap and marinate for one hour.

Rinse the seasoned chicken legs with water to remove the salt and peppercorns. Place scallion and ginger slices and chicken legs on a plate.

Place in a steamer and steam at 100 degrees Celsius for 25 minutes. Once the time is up, enjoy! (If the chicken legs are small, you can shorten the time by 5 minutes. Alternatively, you can use a gas stove, bring to a boil over high heat, then reduce to low heat, cover, and steam for 20 minutes.)
