Slice the pork belly and cut the scallions into diagonal slices.

Heat the pan, add the pork belly and stir-fry until the oil is rendered.

Add a large bowl of water, cover the pot, and cook until the water evaporates (we added water because we like our pork belly softer, but you can also cook it without water; just stir-fry it a little longer).

Boil the water dry

Add a spoonful of light soy sauce, a spoonful of dark soy sauce, and a small amount of white sugar, stir-fry to color.

Pour a spoonful of cooking wine around the edge of the pot.

Stir-fry until the pork belly is browned.

Add the scallions and stir-fry quickly for 2-3 minutes.

Add a little salt and stir-fry until flavorful.
