How to make Chaojia sweet and sour spareribs

1. Wash the ribs, blanch them, add onion segments, ginger slices, garlic cloves, and wolfberries, and cook the ribs for thirty minutes. (If the ribs are too hard, it is recommended to use a pressure cooker to cook them)

2. After the ribs are cooked, take them out, drain, add dark soy sauce, light soy sauce, rice wine, white sugar, vinegar and salt and marinate for 30 minutes. You can add more vinegar and a small amount of salt.

3. Add oil to the pan and heat it to 70% hot. Put the ribs in and fry them. More oil is needed in this step. Fry the ribs until both sides turn yellow. Be sure to turn them over to avoid burning them.

4. After frying, pour out the excess oil, leaving only the base oil, add rock sugar to stir-fry for color. When the sugar turns brown, add the fried ribs and stir-fry.

5. Pour in the marinated pork ribs juice, add a little pork ribs soup, and cook on medium heat for 30 minutes. Taste the juice in the meantime to see if the flavor is what you need.

6. After the ribs are seasoned, simmer over high heat until the sauce thickens. Spray some vinegar on them before serving. The delicious sweet and sour ribs are ready.
