1. Food Features

Braised spare ribs is a way of cooking spare ribs. The raw materials include spare ribs and potatoes, and the auxiliary ingredients include rock sugar, salt, dark soy sauce, light soy sauce, etc. The preparation of dishes varies from region to region, and the cooking methods vary from region to region.

2. Method 1 of stewing spareribs

Main ingredients: pork ribs, potatoes.

Auxiliary ingredients: rock sugar, salt, dark soy sauce, light soy sauce, onion, ginger, garlic, star anise, cardamom, pepper, red dried pepper, etc.

1. Pour water into the pot, put in the ribs, bring to a boil, pour in cooking wine, cook for three minutes, remove, rinse off the blood foam, and drain the water;

2. Pour oil into the pot, heat over low heat, add a handful of rock sugar, melt over low heat until the rock sugar turns light brown, pour in the ribs, stir fry evenly to color;

3. Push the ribs aside slightly, leaving some at the bottom of the pot, sauté the scallions, ginger slices, star anise, cardamom, and peppercorns, then stir-fry with the ribs;

4. Pour in cooking wine and stir-fry, then pour in a little dark soy sauce and light soy sauce, stir-fry until the color is fully uniform;

5. Pour in enough water (hot water is best), bring to a boil over high heat, then simmer over low heat for half an hour;

6. Remove the floating foam and oil, remove the star anise, grass fruit, and pepper, add salt, and continue to stew for 20 minutes;

7. Peel the potatoes, wash them, cut them into small dices, smash a clove of garlic, chop it into small pieces, clean the red pepper, break it into small pieces, put them into the pot together, and continue to stew for 20 minutes until the potatoes are cooked and the juice is absorbed;

8. Sprinkle in coriander and a little MSG, stir well and serve.

3. Method 2 of stewing spareribs

Main ingredients: pork ribs, garlic.

Auxiliary ingredients: light soy sauce, dark soy sauce, salt, and green onions.

1. Boil the spareribs;

2. Heat the oil in the pan, add the garlic and sauté until fragrant;

3. Add the ribs, pour soy sauce on them, stir-fry for a while, and add water to cover the ribs;

4. Cover the pot, open it and stir-fry every few minutes, paying attention to the moisture;

5. After about 15 minutes, when the ribs are almost juiced, add salt and dark soy sauce and stir-fry;

6. Sprinkle with chopped green onions and serve.
