Swimming crabs and hairy crabs have become regular characters on people's tables in autumn because they are two species of crabs with high economic value. And by the time autumn comes, the swimming crabs have grown fat and strong, and have high edible value. However, since swimming crabs are aquatic food, they must be handled properly when eaten. Steps for cleaning swimming crabs:

1. Prepare a plastic basin and an old toothbrush, add appropriate amount of water and white wine, and pour the swimming crabs into the basin.

2. Let the swimming crab soak in water for 5-10 minutes to give it a thorough bath. Through the stimulation of alcohol, the waste in the body is discharged.

3. Use your thumb and index finger to grab both sides of the crab's shell and turn it over so that its belly faces you. Use your right hand to brush the crab's eight legs to remove the mud and sand.

4. After brushing the thighs, use a toothbrush to brush both sides of the crab shell and the two crab claws, especially the crab claws, because there are many hairs on the crab claws, which are easy to hide dirt.

5. Next is the most difficult step. Use the thumb, index finger and ring finger of your left hand to grab the pair of crab claws of the swimming crab and then turn it over. Use the thumb and index finger of your right hand to open the crab's navel and squeeze out the stolen goods.

6. Then, take advantage of the time when the crab's navel is not yet attached to the crab's belly. Use a toothbrush to quickly brush away the mud and sand in the gap between the crab belly and the crab navel.

7. Finally, place the washed swimming crabs in a clean basin, rinse them with running water, and then put them into the pot to cook.

Tips: When cleaning, don't forget to clean the crab cover (the small cover on the crab's belly button, which has a different shape for male and female crabs). This is the same as removing the shrimp thread when cooking shrimp.
