Ingredients: 700 grams of beef shank, 20 grams each of onion and ginger, 70 grams of soy sauce, 10 grams of sugar, 2 grams of refined salt, 0.5 grams of MSG, 2 grams of star anise, and 1000 grams of sesame oil. Method 1. Cut the beef into slices. Knot the green onions. Slice the ginger. 2. Add water to the pot and bring it to a boil. Add the beef slices and cook through, then remove and dry. Skim off the foam in the soup in the pot and pour it into a container to let it settle for later use. 3. Fry the beef in 50% hot oil until dry, then pour into a colander. 4. Leave 30 grams of oil in the wok and add onion slices and ginger pieces. Stir-fry the star anise briefly, add soy sauce, sugar, salt and beef broth, add the beef and cook until the soup is thick, then add MSG and stir-fry until the soup is dry. Remove from the pan and soak in sesame oil for one or two days, remove from the pan and drain the oil, then serve on a plate. Tips

Mix salt, MSG, soy sauce, sugar, vinegar, five-spice powder, wet starch and sesame oil into juice. 3. Place a clean pot on high heat, heat the oil until it is 60% hot, add the marinated beef, fry until the beef curls up, and pour into a colander to drain the oil. 4. Leave some oil in the pot, add chili cubes, ginger slices, and garlic slices and stir-fry for a while, then pour in the beef, pour the original sauce on it and stir-fry evenly, add the scallion segments, drizzle with sesame oil and serve.
