1. Remove the internal organs of the crucian carp, clean it, add a little salt, cooking wine, ginger and green onion and marinate it in advance (I marinated it for more than ten hours and put it in the refrigerator).

2.Cut the tofu into cubes.

3. Add appropriate amount of oil to the pot, add onion, ginger, garlic, dried red pepper and Sichuan pepper and fry until fragrant.

4. Pick out the onion and ginger from the marinated crucian carp, wipe off the water, and put it in the pot.

5. Fry until crust forms on both sides.

6. Add appropriate amount of water, cooking wine and salt, bring to a boil over high heat, then simmer over medium-low heat.

7. Stew until the soup turns slightly white, then turn to medium heat and add tofu and enoki mushrooms to stew together.

8. Stew until the tofu is well-seasoned and the soup is milky white. Turn off the heat and add coriander.

9. Add pepper powder to season and remove the fishy smell.
