1. 1 round eggplant and appropriate amount of mutton. A little bit of onion, ginger and garlic. I also added some chili peppers for flavor, so don’t worry if you don’t like it.

2. Peel the eggplant and cut into dice.

3. Put the cut eggplant into a bowl, add a little starch and coat evenly.

5. Take out the fried eggplant and set aside. In fact, it is quite delicious at this time, a little sweet~

6. Leave a little oil in the pan, add the lamb pieces and fry until golden brown.

7. Cut the onion into large pieces, slice the ginger, chop some of the garlic into garlic paste, and cut the chili into small sections.

8. After the mutton is fried, add the chili peppers and ginger slices and stir-fry until fragrant.

9. When the skin of the pepper starts to wrinkle, add the chopped onions and stir-fry over high heat until fragrant.

10. Then add boiling water, just enough to cover the mutton. Simmer over medium heat for an hour.

11. After 1 hour, pour in the fried eggplant, add salt and turn to high heat to reduce the sauce.

12. Turn off the heat when the soup is dry, add the minced garlic and stir-fry briefly.
