1. Chop the ribs into small pieces as much as possible (they are available pre-chopped in supermarkets). Drain them in cold water, wash them clean, put them in a pot and add cold water. The water should cover the ribs (more water is also fine). When the water boils, use a spoon to skim off the blood foam. This step takes about 20 minutes.

2. Put half a pot of water in the casserole and bring it to a boil. Put the blanched ribs into the casserole. Do not waste the remaining water from blanching the ribs as the blood foam has been skimmed off. Pour it into the casserole. Put the chopped onion, ginger and garlic into the casserole, then add the star anise, bring to a boil over high heat and then turn to low heat.

3. Add red dates and wolfberries, simmer for about 50 minutes, then pour in cooking wine and add appropriate amount of salt. Simmer for another 15 to 20 minutes.

4. You can add some coriander after serving.
