How to make mushroom tofu stew

2.212 Main ingredients: northern tofu, shiitake mushrooms, and green vegetable hearts.

3. Wash and blanch the mushrooms, add some salt to sterilize.

4. Cut the tofu into 1 cm slices; cut the onion into strips, mince the ginger, and flatten and chop the garlic.

5.1 Start another stove, place the onions at the bottom of the casserole, and then add the fried tofu.

6.2 Heat the wok, add cold oil over medium heat, and fry the tofu slices on both sides until they turn brown.

7. Heat the wok again, and use the remaining oil from frying the tofu to stir-fry the bay leaves, cinnamon and star anise until they are fragrant.

8. Add chopped ginger and garlic and stir-fry until fragrant.

9. Add a spoonful of Pixian bean paste, a spoonful of chopped pepper sauce and half a spoonful of sugar.

10. Pour in soy sauce and aged vinegar and mix well.

11. Add a bowl of water and broth, and wait for the soup to boil.

12. Place mushrooms in the casserole (they can be cut into small pieces).

13. Pour the boiled soup into the casserole.

14. Let the tofu be completely immersed in the soup, simmer on medium heat for about ten minutes, and then open the lid to collect the sauce. Use chopsticks to gently push a few times during the process to make sure it is not stuck to the bottom, but do not flip it over.

15. When the soup is almost reduced, add the green vegetable hearts along the edge of the pot, turn off the heat, and sprinkle with chopped green onions. The tofu and mushrooms are very flavorful. You should taste them before deciding whether to add salt and how much to add.
