How to make cold stewed beef

1. Spread 1 tablespoon of sea salt evenly on the beef tendon and marinate in the refrigerator overnight.

2.1 After the brine is boiled, add the blanched beef tendon and stew over low heat for about half an hour

3.2 Rinse the marinated beef tendon under running water to remove the salt, and cut it into large pieces 6-8cm thick along the grain. Put the pot in cold water to cover the beef tendon and bring to a boil, rinse off the foam and set aside

4.1 Cut the soaked beef tendon into thin slices against the grain

5.2 Take out the braised beef tendon and put it aside. Let the marinade cool down. When the marinade cools down to a level that is not too hot to touch, put the beef tendon back in and soak it in the refrigerator for at least 3 hours.

6. Crush the garlic into minced garlic, cut the red pepper into circles, cut most of the green onions into thin strips, leaving one or two to cut into chopped green onions, and chop the coriander for later use. Take out 2 tablespoons of brine from the pot and mix with minced garlic, chili rings, balsamic vinegar, sugar, white pepper and sesame oil to make a sauce

7. Spread the shredded green onion on the bottom of the plate, put the beef slices on top, pour the sauce on top, and finally sprinkle with chopped green onion and coriander.
