How to make mushroom and tofu noodles

1. Sauce: 100 grams of Liubiju thin yellow sauce, 200 grams of king oyster mushrooms, 120 grams of fresh shiitake mushrooms, 80 grams of five-spice dried tofu, 20 grams of fresh soy sauce, 15 grams of sugar, 3 star anise, 25 grams of peanut oil; Noodles: a bag of 200 grams of semi-finished flat udon noodles; Toppings: 50 grams of shredded kohlrabi, 50 grams of shredded cucumber, 50 grams of shredded carrots, 30 grams of green beans, and 30 grams of soybeans.

2.12 First cut the spiced tofu and mushrooms into dices and set aside.

3.21 Cut the noodles into shreds, cook the green beans and soybeans, and arrange them on a plate for later use. Unpack udon noodles and shake them open for later use.

4. Heat the wok and add peanut oil.

5. Add diced mushrooms and stir-fry until star anise is fragrant.

6.1 Then add the yellow bean paste and stir-fry.

7.2 Stir-fry the diced mushrooms until they are slightly colored and 50% of the water is gone, then add the spiced dried tofu and continue stir-frying for 3 minutes.

8. After the yellow sauce is fried until fragrant, pour in an appropriate amount of fresh soy sauce and stir well.

9. Add two teaspoons of sugar.

10. Finally, use high heat to reduce the sauce. When the sauce has dried up and 60% of the water is gone, it can be removed from the pan.

11. Bring the soup pot to a boil and blanch the udon noodles. Then put the noodles into a bowl, put on the toppings, scoop in two spoons of fried sauce, mix well and it is ready to eat.
