How to ferment fried dough sticks

Fried dough sticks are also a breakfast food that many people choose, mainly because fried dough sticks not only taste good, but also can give a strong sense of fullness, and fried dough sticks and soy milk are a perfect match. When making fried dough sticks, the main raw material used is flour. The flour needs to be fermented before making the fried dough sticks to make them crispy and chewy. Here is a recommended fermentation method for fried dough sticks.

Making fried dough sticks with yeast requires fermentation. The length of fermentation time is related to many factors. The following explains how long it takes to ferment fried dough sticks in three situations.

1. In summer, fermentation usually takes two or three hours

In summer, if the air conditioner is not turned on indoors, the fermentation will be very fast at a relatively high room temperature, and the kneaded dough will be fermented in two or three hours.

If you plan to knead the dough at night and fry the dough sticks in the morning, you can prepare the dough as follows:

Knead the dough two or three hours before going to bed and let it ferment at room temperature. The dough will basically have finished fermenting by the time you go to bed. At this time, you can wrap the fermented dough with plastic wrap and put it in the refrigerator to allow the dough to ferment slightly in the refrigerator. After getting up in the morning, take out the dough, knead it evenly and it can be used. It is very easy to use.

2. In winter, the dough needs to be fermented in warm water

The room temperature in winter is usually relatively low (unless the air conditioner is on). If the dough is left to ferment at room temperature, it will take five to six hours or even longer. If the fermentation time is too long, the dough will become sour. Therefore, the best way to ferment dough in winter is to put the dough and the basin in warm water at about 30 degrees to ferment. This will also allow the dough to ferment within two or three hours.

If you plan to knead the dough at night and fry dough sticks in the morning in winter, you should knead the dough after 10 o'clock in the evening and cover it with plastic wrap before going to bed, and let it ferment at room temperature overnight. It doesn’t matter if they rise a little too late. It only takes less than 10 minutes to fry the dough sticks the next morning. Because the dough is very soft, it only takes 10 minutes to knead it, and it is also easy to shape it the next morning.

3. Use aluminum-free baking powder for fast fermentation

If the fermentation time is not sufficient, we can replace the yeast powder with aluminum-free baking powder. After kneading the dough, wrap it in plastic wrap and leave it at room temperature. After about 20 minutes, you can start frying the dough sticks.
