Brush a layer of oil on the bottom of the steamer (or cover it with a steamer cloth), put the noodles in, do not compact them, keep them fluffy, add water to the pot, bring to a boil over high heat and steam for 10 minutes. (Of course, you can also throw the noodles directly into the pot and cook for 3 minutes before taking them out, but this method may make the noodles too soft and the taste will be bad)

4. After 1 minute, remove the steamer and pour the noodles into the water in the steamer. Cook for 1 minute and then remove and rinse with cold water. (Separate the noodles while cooking, and remember not to add raw water, this is not cooking dumplings)

5. Drain the water first, add vegetable oil (corn oil is also OK, but the taste will be worse). Use chopsticks to shake the noodles while adding oil. The speed and strength should be fast. If you take too long, you will have to wait to eat the noodles. (I didn’t take a picture of this step because I was afraid the dough would become a pancake after taking the picture)

6. Wash the chicken breast and drain the water. Put the washed chicken into a pot of cold water, add a little cooking wine, green onion, and ginger slices. Boil over high heat for 5 minutes, then turn off the heat and simmer for 10 minutes with the lid on.

7. After 10 minutes, if there is no blood when you insert chopsticks into the dough, tear it into shreds and set aside

8. Take a bowl, put soy sauce, sesame paste, pepper oil, sesame oil, vinegar, salt, minced garlic, sugar, oyster sauce, add cold noodles, shredded chicken, sprinkle with chili oil, cooked sesame seeds, and chopped green onions and you can start eating. (Vinegar is the soul of cold noodles and it is indispensable)

9. Pour the sauce on it and you can start eating.
