How to cook hairtail fish in black bean sauce

3. Prepare some dry starch, use chopsticks to pick up the marinated hairtail pieces and dip them into the starch to evenly coat them with a thin layer of starch.

4. Wrap everything.

5. Cut the scallion into sections, peel and flatten the garlic, and slice the ginger.

6. Heat oil in a pan, add the hairtail pieces one by one and fry over high heat until both sides are golden brown.

7. Remove from the water and set aside.

8. Leave some oil in the pan, add onion, ginger, garlic, star anise and fermented black beans and stir-fry over low heat until fragrant.

9. Add a little cooking wine, dark soy sauce, vinegar, sugar, and steamed fish soy sauce and stir-fry for a while.

10. Add a large bowl of water.

11. Bring to a boil over high heat.

12. Add the cut hairtail slices, add water enough to cover the fish, add a little chicken essence and cook over high heat for 2 minutes, then switch to low heat and simmer for 10 minutes. Then turn to high heat and reduce the soup until only a little bit is left before serving.

13. Cut the green onion into flowers.

14. Serve the hairtail, sprinkle with chopped green onions, and enjoy!
