Method

Step 1
Here's a picture of the finished product.

- 02
Step 2
I mince the pork with a knife, adding a little scallion. I always feel that the minced meat I make myself tastes different from the minced meat from a machine. The meat I mince myself is more fragrant. (The picture shows me mincing meat; this is the knife I'm using.)

- 03
Step 3
While I was chopping the meat, my daughter was cutting cabbage into thin strips. (The cabbage was chopped with a separate knife; we could work faster by having our daughters work at the same time.)

- 04
Step 4
Add a small spoonful of salt while chopping the cabbage filling to draw out the moisture from the cabbage.

- 05
Step 5
Wrap the chopped cabbage filling in a clean gauze bag and squeeze out the water for later use.

- 06
Step 6
Set aside the squeezed-out cabbage filling for later use.

- 07
Step 7
Put the prepared cabbage filling and minced meat into a bowl.

- 08
Step 8
Heat oil in a cold pan (use a little more oil than you would normally use for stir-frying).

- 09
Step 9
Chop some ginger, scallions, and dried shrimp and add them to the filling. Then pour the hot oil over the filling.

- 10
Step 10
Stir clockwise until the mixture becomes elastic.

- 11
Step 11
Add appropriate amounts of oyster sauce, light soy sauce, salt, and chicken bouillon.

- 12
Step 12
Stir well and let it sit in the refrigerator for half an hour. (Letting it sit in the refrigerator serves two purposes: 1 ) to allow the flavors to penetrate, 2 ) to make it easier to wrap.

- 13
Step 13
Because I was in a hurry and also because I was making a lot, I bought ready-made dumpling wrappers from the morning market. Place the dumpling filling in the middle of the wrapper, press the wrapper down with both hands, and gently fold it inwards, as shown in the picture.

- 14
Step 14
They were wrapped one by one and arranged neatly.

- 15
Step 15
Boil water in a pot. Once boiling, carefully drop the dumplings one by one into the pot along the side. Gently push the dumplings with the back of a spoon to prevent them from sticking to the pot. I didn't add any salt or oil, and the dumplings still didn't stick to the pot. I added cold water three times during the process.

- 16
Step 16
The dumplings are cooked when they float to the surface of the water one by one.

- 17
Step 17
Remove from the pot and plate.

- 18
Step 18
Let's eat! It tastes amazing! (You can dip it in any seasoning you like; the seasoning can be chosen according to your own taste.)
