1. Prepare all raw materials. Cut the duck meat into pieces, cut the ginger into shreds, slice the garlic, cut the dried chili into sections, wash the star anise, cinnamon, bay leaves, and fermented black beans.

2.1 Cook for another 2 minutes after the water boils

3.2 Put the duck meat in cold water, add ginger slices, bring to a boil, and blanch the blood from the duck meat

4.1 Wash the pot, dry the water, add oil, add a spoonful of white sugar, and stir slightly

5.2 Remove from the water, rinse with cold water, and drain

6.1 After the water is slightly dried, add shredded ginger, garlic slices, dried chili segments, star anise, cinnamon, and bay leaves.

7.2 Add duck meat and stir-fry.

8. After the aroma comes out, pour in the fermented black beans. I personally like the taste of Lao Gan Ma, so I also added Lao Gan Ma black beans, which is very fragrant. Friends who don’t like spicy food can leave it out, but adding spicy food will make it more layered.

9. Stir-fry slightly, stir well and add appropriate amount of soy sauce and cooking wine

10. Add a bowl of water, bring to a boil over high heat, then continue to simmer over medium-low heat

11. Turn off the heat when the juice is almost reduced, put it on a plate and serve. It smells delicious, right?
